Two *New* Peasant Bread Kits with Bowls

Just before Christmas, I added a “peasant bread kit” to the shop. It included nearly all of my favorite bread baking tools: a digital scale, a GIR spatula, and a Dot and Army cloth bowl cover.
But it left out maybe my favorite bread baking tool, as far as baking peasant bread is concerned: two 1-qt Pyrex bowls.

I made your soft sandwich bread today – superb!
I am going to try the multigrain bread recipe on page 42 of your cookbook next. Could I use one 8×4 loaf pan instead of the 2 bowls called for ?

I would bake off about 3/4 of the dough in your loaf pan — it’s a little too small to handle all of the dough. Do you have a few small ramekins? Or other small oven-safe vessels? You can bake off the rest of the dough in ramekins or something similar … the mini loaves are super cute actually. You can bake everything at once, but remove the ramekins sooner … just keep an eye on them.
What is the number on the Pyrex bowls in your kit?
BTW I made the peasant bread recipe but had to use my 4 qt. bowl. Turned out great though and I love the texture of this bread. And great toasted!!!

I got Bread, Toast, Crumbs for Christmas and I love it. I have a question. I use a scale to weigh flour and I always use King Arthur Unbleached AP. The grams listed on the package says 120g per cup. On your recipes it is 128g per cup. This is confusing so I would like to know which one to follow.
