My tips for making great pizza at home:
2. The dough: I'm partial to the pizza dough recipe in my cookbook, Bread Toast Crumbs, because it's so easy and doesn't call for a long rise, but I absolutely love Jim Lahey's recipe (which calls for an 18-hour rise), too.
3. Gently stretch the dough to prevent air bubbles from deflating.
4. Use parchment paper for ease when transferring dough to oven.
