This freekeh salad is my favorite kind of recipe, one whose assembly is fluid — as the vegetables roast in the oven, the freekeh cooks stovetop, and you make the dressing — and whose payoff is big: minimal mess and a meal that's at once light and comforting. //

Bok choy salad is excellent as its crunchy stalks and sturdy leaves are capable of enduring a bold, salty-sweet dressing. A slightly sweet dressing, in fact, is just what slightly bitter bok choy needs. The most fun part about this recipe, however, is the sesame-almond crunch, a mix of melted sugar, toasted almonds and sesame seeds, that comes together in a flash and disappears about as quickly. //

Minimal ingredients, minimal hands on time, this whole-roasted cauliflower with fried capers and brown butter breadcrumbs is a winner. The cauliflower emerges from the oven knife tender but not mushy. Here, the head's edges crisp and caramelize both from the heat of the oven and the oil pooling in the bottom of the pan, and the nutty crumbs and burst capers that nestle in the web of stems and spill all around the serving platter couldn't be more irresistible. //
