STIR IN LEMON JUICE, SALT & CUCUMBER.

STEP 7

SPREAD YOGURT ON A PLATTER. TOP WITH ROASTED EGGPLANT.

TOSS TOMATOES WITH OLIVE OIL, VINEGAR & SALT.

ADD ARUGULA & GENTLY TOSS. LAYER ON TOP OF EGGPLANT.

STEP 10

TOP WITH FRESHLY GROUND BLACK PEPPER.
