Apple Dutch Baby

Loaded with sweet-tart apples, this Dutch baby recipe has become an AK community favorite! The batter comes together in no time, and 15 minutes later it’s done. Many readers have had success using gluten-free flour as well as dairy-free substitutes. See comments below!

This Dutch baby recipe is one of the most fun recipes to prepare as it comes together in just minutes, puffs dramatically in the oven, and feeds four comfortably (so long as you provide some bacon or sausage on the side.)
Having made this many times now, the critical step is to purée the ingredients to ensure the batter is not lumpy, which will ensure the Dutch baby cooks properly and emerges with custardy texture. You can use a food processor, a traditional blender, or an immersion blender.
I also use double the amount of apples suggested in the original recipe to ensure loads of tender apple slices fill every bite. Though the recipe does not call for it, a dash of cinnamon is a wonderful addition to this batter.

Ingredients
- 1/2 stick (1/4 cup) unsalted butter
- 1 large sweet apple such as Honey Crisp, peeled and thinly sliced
- 1/2 cup whole or 2% milk
- 1/2 cup (64 grams) all-purpose flour
- 4 large eggs
- 3 tablespoons granulated sugar
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- Confectioners sugar for dusting
Instructions
- Put oven rack in middle position and preheat oven to 450°F.
- Melt butter in a 9-inch oven-safe skillet over moderate heat, then transfer 2 tablespoons to a blender or food processor. Add apple slices to the skillet and cook, turning over once, until beginning to soften, 3 to 5 minutes. (They don’t need to caramelize, just soften.)
- While the apples are cooking, add milk, flour, eggs, granulated sugar, vanilla, and salt to butter in blender and blend until smooth. (Do do this step — I didn’t the first time around and the batter was really lumpy.)
- Pour batter over apple and transfer skillet to oven. Bake until pancake is puffed and golden, about 15 minutes. Dust with confectioners sugar and serve immediately.

Hi! I’m not sure, because you kind of need the pan to be hot from the start, but your best bet would be to use a 9-inch cake pan.

Loved this recipe. Feeds 4 beautifully. Only change I made is that I used a bowl and an immersion blender instead of the food processor to mix the batter.

Excellent recipe… perfect for an iron skillet. It’s a bit heavy on the egg for my taste, but most other people will enjoy it throughly. I used Truvia 1:1 and sprinkled 1/4 teaspoon cinnamon in with the softening apples and it was delicious.

Hi, what can I use instead of a cast iron skillet dish. I don’t have one. I have a Pyrex casserole dish, or cake pans ?? ThankYou 🇦🇺
I think a cake pan would probably work great. Would you be comfortable heating it in your oven, with the butter just for a minute or two to melt the butter and bring the temperature of the pan up a bit? I’d hate for you to ruin your pan. It’s also possible that it would work just fine in a non-preheated cake pan.
Quick question – in the ingredients, you list “thinly sliced apples” but in the instructions you say “apple wedges”. Can you tell me which is correct? Your beautiful pictures looks as if you used thinly sliced apples. I can’t wait to make this – sounds and looks delicious!

Absolutely! I think 1 or 2 peaches max would do the trick!
Delicious recipe. I added a tsp of cinnamon and a pinch of nutmeg to the apples as the cooked. Use my immersion blender for the base as it works amazingly well for other batters like my Yorkshire Puddings. I didn’t use powdered sugar as my husband wanted maple syrup. Can’t wait to try the blueberry one and I might even branch out with peaches or nectarines.

So the Apple Dutch Baby was easy to make and, of course, very tasty. I substituted almond milk for whole milk without any problem (as far as I can tell). I’m looking a bunch of bananas on my counter and wondering if banana Dutch Baby might work.
