For me Thanksgiving is philadelphia fish house punch with Alice Waters’ potato gratin, freshly baked no-knead thyme dinner rolls, homemade red wine cranberry sauce, stuffing with Bell’s seasoning or kale and cranberries, and Ronnie Hollingsworth’s most excellent squash pie.
In other words, the turkey is optional. I would be happy with a delicious butternut squash lasagna. That said, I love nothing more than leftover turkey (or ham) sandwiches with my grandmother’s mustard sauce.
