Favorite Cabbage Soup, Updated

In this post, I spend a few moments talking soup, not only about my favorite recipes, but also about essential pieces of gear (peelers, storage containers, immersion blenders), books, and techniques I rely on all soup-season long. // alexandracooks.com

Chickpea Tagine with “Tomato Jam” and Roasted Delicata Squash

Here I've pickled peppers, onions, and fennel, and I've been tucking the mix into sandwiches, spreading it atop melty cheese toasts, and, as intended, sprinkling it over just-baked pizza. I imagine it would be fabulous with grilled bratwurst or in a Philly cheesesteak-style sandwich. // alexandracooks.com

This roasted eggplant lasagna with sautéed greens uses tomato sauce layered between noodles, roasted eggplant rounds, sautéed Swiss chard, and a mix of parmesan and mozzarella. I've omitted the classic ricotta + egg layer here because I've never loved it, but feel free to add it. This is a recipe that can be tailored to your liking. // alexandracooks.com

Thai-Inspired Chicken and Cabbage Salad

This summer vegetable salad comes together in no time—as the shallots macerate in the vinegar for the dressing, you can prep everything else: slice the radishes, turnips, scallions, etc. With a hunk of bread on the side, the meal is complete. // alexandracooks.com

10-Minute Meal: Greens + Tuna + Shallot Vinaigrette

In this skirt steak nicoise, while the skirt steak rests, you’ll make a simple sauce Niçoise. After halving cherry tomatoes, coarsely chopping olives, and tossing the two with capers, you’ll briefly sauté the mix with olive oil and garlic. After just a few minutes, the tomatoes will begin to break down, releasing juices and sweetening as they soften. A squeeze of fresh lemon juice at the end offers a welcomed hit of acidity. // alexandracooks.com

Skillet-Seared Skirt Steak Niçoise

In these skirt steak sandwiches, skirt steak, which cooks to medium-rare in just about 5 minutes, is layered with arugula between slices of focaccia smeared with herbed mayonnaise. The key, as with all meats, is to let the steak rest for at least 10 minutes before slicing, and with skirt steak, to slice it thinly against the grain. // alexandracooks.com

This recipe for almond-sesame soba noodles with quick-pickled vegetables is really fun and super easy. It's also a good one to rely on in the summer — it's so refreshing — and, if you subscribe to a CSA or tend a prolific garden, it makes great use of all of those carrots, cucumbers, and radishes you may find yourself up to your eyeballs in. // alexandracooks.com
